Burwash Soup - Siege of September Soup

I'm glad you picked the "Soup, . . . .", because I have a Fantastic Story & Poem to pass on to you from the McGILL's as told by DoRight!   See the Poem & Story,

The Siege Of September --- DoRight & Mike

2 Cups Chicken stock
1 Cup beef broth, (additional water if needed)
Celery seed - 1 tsp.
3 large white potatoes (skins on, diced-up.)

Bring to a boil. Turn down to simmer until potatoes are plumb done.

While potatoes are cooking, Saute in 2 Tbsp of butter, 1 large onion, and 1 clove garlic. Sprinkle with ground cumin seed and Lowrey's seasoned pepper.

Add to the potatoes: 6 Tbsp of butter, 1 tsp. thyme, sauteed-seasoned onion, 2 1/2 Cups milk, 1 lob frozen corn kernels, and salt as needed.

Simmer until liquid is reduced to 'Soupy'. Add 4 oz. shredded Monterey Jack cheese, 1/2 Cup grated Parmesan Cheese. Simmer to thicken. Stir in 2 heaping Tbsp of sour cream and Serve each year on the 28th day of September.
