Fried Grasshoppers
There are those Indians who fried grasshoppers in their
own oil. It seems that grasshoppers, thus treated, have quite a nutty,
appealing flavor.
Dried Corn on the Cob
Dry shucked corn on the cob. To cook, shell and soak.
Cook by boiling just as you would dried beans.
Leather Britches or Breeches
Indians originated this procedure but it is still followed
by white men or women in some counties. String beans are strung up
with a darning needle and hung in a cool place to dry. After soaking,
they are cooked like fresh beans with salt pork.
Dried Cabbage Leaves
Remove the large outer leaves of heads of cabbage and
string leaves on a thin stick. Hang stick in the sun or inside to
dry. To cook, cover with hot water and cook until tender. Season with
meat drippings.
Peach Leather
Cook 2 1/2 cups mashed ripe peach pulp with 1/2 cup
sugar in heavy skillet over low heat until thickened. Spread out a
thin layer on oiled baking sheets. Cover with mosquito netting. Put
in the hot sun for 3 days to dry. Bring in at night. When the leather
draws away from the sides of the pan, it is done. Lay on a bread board
sprinkled with granulated sugar. Sprinkle sugar over the top. Roll
out thin. Cut into strips, roll up like small wafers. Dust again with
sugar. Pack in tin box. It will keep indefinitely.
Swamp Potato Meal
Roast swamp potatoes in the ashes until done. Mash potatoes
into a meal. Dry and use as corn meal. This was used when there wasn't
enough corn meal.
